Caper Mutton Tea Sandwiches

Ingredients

  • ½ lb cold cooked mutton, chopped very fine
  • 2 tbsp cream or olive oil
  • 1 tbsp capers
  • ½ tsp salt
  • 1/8 tsp pepper
  • 8 slices bread, crusts removed
  • butter for spreading
  • 4 mint leaves

Method

  1. 1 Chop the cold cooked mutton very fine.
  2. 2 Mix the mutton with cream (or olive oil), capers, salt, and pepper until thoroughly combined.
  3. 3 Butter the bread slices and trim off the crusts.
  4. 4 Spread the mutton mixture thickly on the bread slices.
  5. 5 Place a mint leaf at each of the four corners, top with another slice of bread, and press together.
  6. 6 Cut each sandwich diagonally from corner to corner to make four triangles.
