Candied Stem Ginger

Ingredients

  • 1 piece stem ginger root
  • 3 cups sugar
  • 3/4 cup water
  • Juice of 1 lemon

Method

  1. 1 Soak the ginger root in warm water overnight.
  2. 2 Wash with a vegetable brush, scrape well, and place in fresh water to cover.
  3. 3 Cook gently on the stove or in a fireless cooker until tender.
  4. 4 Combine sugar, water, and lemon juice in a saucepan and bring to a boil.
  5. 5 Boil the syrup for ten minutes, then add the tender ginger.
  6. 6 Simmer until the syrup is absorbed, then let stand in a cool place for two days.
  7. 7 Reheat the ginger, drain on a sieve, and roll in sugar.
  8. 8 Pack in an airtight tin box to store indefinitely.
