Candied Stem Ginger
Ingredients
- 1 piece stem ginger root
- 3 cups sugar
- 3/4 cup water
- Juice of 1 lemon
Method
- 1 Soak the ginger root in warm water overnight.
- 2 Wash with a vegetable brush, scrape well, and place in fresh water to cover.
- 3 Cook gently on the stove or in a fireless cooker until tender.
- 4 Combine sugar, water, and lemon juice in a saucepan and bring to a boil.
- 5 Boil the syrup for ten minutes, then add the tender ginger.
- 6 Simmer until the syrup is absorbed, then let stand in a cool place for two days.
- 7 Reheat the ginger, drain on a sieve, and roll in sugar.
- 8 Pack in an airtight tin box to store indefinitely.
