Candied Spearmint Leaves

Ingredients

  • Fresh mint leaves
  • 1 egg white, slightly beaten
  • 3 tablespoons granulated sugar
  • 3 drops spearmint oil

Method

  1. 1 Wipe fresh mint leaves and remove them from stems.
  2. 2 Dip a finger in the slightly beaten egg white and gently rub each leaf.
  3. 3 Mix sugar with spearmint oil and sift over both sides of the leaves.
  4. 4 Lay leaves close together on a wax paper-covered cake rack.
  5. 5 Leave in a warm but not hot place until crisp and dry.
