Candied Spearmint Leaves
Ingredients
- Fresh mint leaves
- 1 egg white, slightly beaten
- 3 tablespoons granulated sugar
- 3 drops spearmint oil
Method
- 1 Wipe fresh mint leaves and remove them from stems.
- 2 Dip a finger in the slightly beaten egg white and gently rub each leaf.
- 3 Mix sugar with spearmint oil and sift over both sides of the leaves.
- 4 Lay leaves close together on a wax paper-covered cake rack.
- 5 Leave in a warm but not hot place until crisp and dry.
