Candied Quince Chips

- sugar syrup
- granulated sugar for coating
Method
- 1 Scald the quinces thoroughly, then slice them into a dish.
- 2 Pour scalding hot sugar syrup over the quinces and let them stand overnight.
- 3 Place quinces on plates, coat with sugar, and turn them daily, adding more sugar each time until dry.
- 4 For a clear finish, heat the chips in syrup without boiling.
