Candied Prunes In Lemon Syrup

Ingredients

  • 1 lb prunes
  • ½ lb sugar
  • 1 pint water
  • thin rind of 1 lemon
  • juice of 1 lemon

Method

  1. 1 Wash prunes in warm water. Place in a pot with cold water, dissolved sugar, lemon rind, and lemon juice.
  2. 2 Simmer for 1 hour or until prunes are tender enough to mash when pressed. Strain fruit, reserving the syrup.
  3. 3 Boil the reserved syrup until very thick and near crystallization. Pour hot syrup over the prunes.
  4. 4 Gently turn prunes to coat them thoroughly without breaking. Let sit for 12 hours.
  5. 5 Pile the prunes onto a glass serving dish and serve as dessert.
