Candied Prunes In Lemon Syrup
Ingredients
- 1 lb prunes
- ½ lb sugar
- 1 pint water
- thin rind of 1 lemon
- juice of 1 lemon
Method
- 1 Wash prunes in warm water. Place in a pot with cold water, dissolved sugar, lemon rind, and lemon juice.
- 2 Simmer for 1 hour or until prunes are tender enough to mash when pressed. Strain fruit, reserving the syrup.
- 3 Boil the reserved syrup until very thick and near crystallization. Pour hot syrup over the prunes.
- 4 Gently turn prunes to coat them thoroughly without breaking. Let sit for 12 hours.
- 5 Pile the prunes onto a glass serving dish and serve as dessert.
