Candied Orange Peel And Pulp

Ingredients

  • 12 pale oranges
  • Water for soaking and boiling
  • Salt for soaking
  • 1.5 lbs sugar per pound of orange pulp

Method

  1. 1 Remove pulp from oranges, discarding seeds and skins. Soak the empty orange shells in salted water overnight.
  2. 2 Boil the soaked shells in plenty of spring water for 9-10 hours until tender. Drain and slice them thinly.
  3. 3 Combine the sliced shells with the reserved pulp. For every pound of mixture, add 1.5 lbs of fine sugar.
  4. 4 Boil the mixture together for about 45 minutes until the candied pieces are clear.
