Candied Orange Peel And Pulp
Ingredients
- 12 pale oranges
- Water for soaking and boiling
- Salt for soaking
- 1.5 lbs sugar per pound of orange pulp
Method
- 1 Remove pulp from oranges, discarding seeds and skins. Soak the empty orange shells in salted water overnight.
- 2 Boil the soaked shells in plenty of spring water for 9-10 hours until tender. Drain and slice them thinly.
- 3 Combine the sliced shells with the reserved pulp. For every pound of mixture, add 1.5 lbs of fine sugar.
- 4 Boil the mixture together for about 45 minutes until the candied pieces are clear.
