Candied Lemon Rinds

Ingredients

  • 2 lemons
  • 1 cup white wine vinegar
  • 1 cup sugar

Method

  1. 1 Rub lemons to smooth rinds, then cut in half. Remove the pulp and boil the rinds in water, changing the water once or twice to remove bitterness, until tender.
  2. 2 Remove rinds and scrape away any remaining pulp. Cut the rinds into thin strips or short pieces.
  3. 3 Place the rinds in a glass jar.
  4. 4 Boil vinegar and sugar together until they form a thin syrup. Pour the hot syrup over the rinds in the jar and let cool.
