Candied Lemon Peel

Ingredients

  • large smooth Malaga lemons
  • salt and water
  • boiling water
  • clarified sugar
  • clean cloth

Method

  1. 1 Peel the lemons into thin chips using a small knife.
  2. 2 Soak the peel chips in salt and water overnight.
  3. 3 Boil the chips in fresh water until tender, then drain and cool in water.
  4. 4 Place chips in an earthen pan, cover with boiling clarified sugar, and let sit for two days.
  5. 5 Strain the syrup, add more sugar, and boil until thick; return chips and simmer for a few minutes.
  6. 6 Let the mixture sit for two days, then repeat the straining, boiling, and simmering process once more.
  7. 7 Let the chips sit for two additional days to candy.
  8. 8 Boil four pints of clarified sugar to the 'blown' stage (small bubbles appear when blown through a skimmer).
  9. 9 Drain and wipe the chips, then dip them in the hot sugar syrup, stirring until the sugar turns white.
  10. 10 Remove chips with forks, shake into a wire sieve, and dry in a warm place or stove.
