Candied Lemon Drop Cookies

Ingredients

  • 1/2 lb flour
  • 3 oz butter
  • 3 oz candied peel
  • Grated rind of 1 lemon
  • 1 egg
  • A little milk
  • 1 tsp baking powder
  • 3 oz sugar

Method

  1. 1 Rub the butter into the flour.
  2. 2 Add the sugar, grated lemon rind, baking powder, and chopped candied peel. Mix well.
  3. 3 Mix in the well-beaten egg and a little milk to form a dough.
  4. 4 Place small heaps on a greased baking sheet.
  5. 5 Bake in a 400°F oven for about 15 minutes.
