Candied Green Ginger

Ingredients

  • 1 lb green ginger
  • 1 lb sugar
  • 1/2 pt water

Method

  1. 1 Scrape the outside of the green ginger and boil in a little water until soft.
  2. 2 Remove ginger and scrape off any remaining spots.
  3. 3 Make a syrup by boiling 1 lb sugar and 1/2 pt water.
  4. 4 Add the ginger to the syrup and boil slowly for about 30 minutes.
  5. 5 Remove the ginger and boil the syrup a little longer to thicken.
