Candied Green Ginger
Ingredients
- 1 lb green ginger
- 1 lb sugar
- 1/2 pt water
Method
- 1 Scrape the outside of the green ginger and boil in a little water until soft.
- 2 Remove ginger and scrape off any remaining spots.
- 3 Make a syrup by boiling 1 lb sugar and 1/2 pt water.
- 4 Add the ginger to the syrup and boil slowly for about 30 minutes.
- 5 Remove the ginger and boil the syrup a little longer to thicken.
