Candied Grapefruit Peel

Ingredients

  • 1 grapefruit peel, cut into 8 sections
  • Sugar equal to 1.5 times the weight of the peels
  • Water for soaking, boiling, and syrup

Method

  1. 1 Prick each peel section and soak in water for three days, changing water morning and evening. If weather is hot, scald instead of soaking.
  2. 2 On the fourth day, boil peels until easily pierced. Remove, squeeze dry, and dry in sun or a slow oven (300°F).
  3. 3 Weigh peels and prepare syrup using 1.5 times their weight in sugar and water. Boil until thick.
  4. 4 Add peels to syrup and boil until clear. Remove peels, return syrup to boil until thick, then toss peels in syrup until sugar crystals form.
  5. 5 Dry candied peels in the sun for one day.
