Candied Fruit Sponge Cake Sandwiches
Ingredients
- 1 square loaf sponge cake
- 1 cup chopped candied fruit
- Orange juice (for soaking)
- Egg whites
- Sugar
Method
- 1 Bake a sponge cake in a square loaf pan.
- 2 Cut the cake into ¼-inch thick slices.
- 3 Cut slices into rounds using a small biscuit cutter.
- 4 Use a smaller cutter to remove the center of some rounds, leaving rings.
- 5 Place a ring on top of a solid round to create a patty shape.
- 6 Soak chopped candied fruit in orange juice overnight, then fill the spaces.
- 7 Cover with meringue made from egg whites and sugar.
- 8 Brown in the oven, then serve immediately.
