Ingredients

  • 1 square loaf sponge cake
  • 1 cup chopped candied fruit
  • Orange juice (for soaking)
  • Egg whites
  • Sugar

Method

  1. 1 Bake a sponge cake in a square loaf pan.
  2. 2 Cut the cake into ¼-inch thick slices.
  3. 3 Cut slices into rounds using a small biscuit cutter.
  4. 4 Use a smaller cutter to remove the center of some rounds, leaving rings.
  5. 5 Place a ring on top of a solid round to create a patty shape.
  6. 6 Soak chopped candied fruit in orange juice overnight, then fill the spaces.
  7. 7 Cover with meringue made from egg whites and sugar.
  8. 8 Brown in the oven, then serve immediately.
