Candied Fruit Fritters

Ingredients

  • 1 cup candied fruit, chopped
  • 2 tablespoons butter
  • ½ cup milk
  • 1 teaspoon grated lemon peel
  • 1 to 1½ cups flour
  • 8 to 10 eggs
  • powdered sugar for serving

Method

  1. 1 Chop candied fruit and heat with butter, milk, and lemon peel until hot.
  2. 2 Stir in flour to form a stiff paste, then remove from heat.
  3. 3 Work in eggs, two at a time, until the mixture is cool enough to handle.
  4. 4 Form into fritters and fry in hot oil until golden brown.
  5. 5 Serve immediately, dusted generously with powdered sugar.
