Candied Fruit Fritters
Ingredients
- 1 cup candied fruit, chopped
- 2 tablespoons butter
- ½ cup milk
- 1 teaspoon grated lemon peel
- 1 to 1½ cups flour
- 8 to 10 eggs
- powdered sugar for serving
Method
- 1 Chop candied fruit and heat with butter, milk, and lemon peel until hot.
- 2 Stir in flour to form a stiff paste, then remove from heat.
- 3 Work in eggs, two at a time, until the mixture is cool enough to handle.
- 4 Form into fritters and fry in hot oil until golden brown.
- 5 Serve immediately, dusted generously with powdered sugar.
