Candied Freestone Peaches In Spiced Syrup
Ingredients
- 8 lbs firm freestone peaches
- 4 lbs white sugar
- 1 quart vinegar
- 1 oz cinnamon
- 1 oz cloves
Method
- 1 Peel the peaches and place them in a jar.
- 2 Combine sugar, vinegar, and spices in a kettle; bring to a boil and skim.
- 3 Pour the hot syrup over the peaches and let sit overnight.
- 4 The next day, pour off the syrup, boil it again, and pour it back over the fruit.
- 5 On the third day, combine fruit and syrup in the kettle and boil for about 10 minutes until tender.
