Candied Freestone Peaches In Spiced Syrup

Ingredients

  • 8 lbs firm freestone peaches
  • 4 lbs white sugar
  • 1 quart vinegar
  • 1 oz cinnamon
  • 1 oz cloves

Method

  1. 1 Peel the peaches and place them in a jar.
  2. 2 Combine sugar, vinegar, and spices in a kettle; bring to a boil and skim.
  3. 3 Pour the hot syrup over the peaches and let sit overnight.
  4. 4 The next day, pour off the syrup, boil it again, and pour it back over the fruit.
  5. 5 On the third day, combine fruit and syrup in the kettle and boil for about 10 minutes until tender.
