Method

  1. 1 Pick the double violets and remove the green stalks.
  2. 2 Boil sugar and water until the syrup blows very strong.
  3. 3 Add the violets and boil until the syrup blows again.
  4. 4 Rub the sugar against the side of the pan with a spoon until it turns white.
  5. 5 Stir until the sugar crystallizes and coats the flowers.
  6. 6 Sift the candied violets and let them dry completely.
