Candied Double Violets
Ingredients
- double violets
- sugar
- water
Method
- 1 Pick the double violets and remove the green stalks.
- 2 Boil sugar and water until the syrup blows very strong.
- 3 Add the violets and boil until the syrup blows again.
- 4 Rub the sugar against the side of the pan with a spoon until it turns white.
- 5 Stir until the sugar crystallizes and coats the flowers.
- 6 Sift the candied violets and let them dry completely.
