Candied Citrus Peel
Ingredients
- lemon or orange peels
- salt
- water
- brown sugar
Method
- 1 Soak peels in strong salt water until soft enough to pass a straw through.
- 2 Rinse peels repeatedly in fresh water until the salt taste is gone.
- 3 Simmer peels in thin brown sugar syrup until they become clear.
- 4 Remove peels and place on a dish to rest for a day or two.
- 5 Boil the remaining syrup until thick, then fill the peels with it.
- 6 Allow the filled peels to dry completely.
