Candied Citrus Peel

Ingredients

  • lemon or orange peels
  • salt
  • water
  • brown sugar

Method

  1. 1 Soak peels in strong salt water until soft enough to pass a straw through.
  2. 2 Rinse peels repeatedly in fresh water until the salt taste is gone.
  3. 3 Simmer peels in thin brown sugar syrup until they become clear.
  4. 4 Remove peels and place on a dish to rest for a day or two.
  5. 5 Boil the remaining syrup until thick, then fill the peels with it.
  6. 6 Allow the filled peels to dry completely.
