Candied Citrus Peel Crystallized In Sugar
Ingredients
- Orange, lemon, or citron peels (rings or strips)
- Clarified sugar
- Water
Method
- 1 Drain the peels from any existing syrup, wash them in lukewarm water, and place on a sieve to drain.
- 2 Boil clarified sugar until it reaches a strong thread stage, then add the peels and boil until the sugar coats them.
- 3 Remove from heat, let cool slightly, then rub the sugar against the pan sides with a spoon until it crystallizes and turns white.
- 4 Remove peels with a fork, place on a wire rack to drain, and cut into desired sizes if necessary.
