Candied Apricots In Brandy Syrup

Ingredients

  • 1 lb apricots (fresh, not too ripe)
  • 1 lb loaf sugar
  • Water (enough to cover fruit)
  • French brandy (equal amount to syrup)

Method

  1. 1 Combine sugar and enough water to cover the apricots in a pot. Bring to a boil and skim.
  2. 2 Add apricots and boil for 5-6 minutes. Remove fruit with a slotted spoon and place on dishes to cool.
  3. 3 Boil the remaining syrup until reduced by half.
  4. 4 Place cooled apricots in bottles. Cover with equal parts reduced syrup and French brandy.
