Candied Apricots In Brandy Syrup
Ingredients
- 1 lb apricots (fresh, not too ripe)
- 1 lb loaf sugar
- Water (enough to cover fruit)
- French brandy (equal amount to syrup)
Method
- 1 Combine sugar and enough water to cover the apricots in a pot. Bring to a boil and skim.
- 2 Add apricots and boil for 5-6 minutes. Remove fruit with a slotted spoon and place on dishes to cool.
- 3 Boil the remaining syrup until reduced by half.
- 4 Place cooled apricots in bottles. Cover with equal parts reduced syrup and French brandy.
