Cabbage And Salt Pork Soup
Ingredients
- 2 quarts water
- 3 onions, chopped fine
- 1 bouquet garni (soup herbs)
- 2 slices salt pork, diced
- 1.25 lbs soup meat with bone
- 2.5 cups finely shredded cabbage
- 2 tablespoons flour
- 0.25 cup water
- 1 tablespoon salt
- 1 teaspoon pepper
- 0.5 teaspoon thyme
Method
- 1 In a large saucepan, combine 2 quarts water, onions, soup herbs, salt pork, soup meat, and cabbage. Bring to a boil.
- 2 Reduce heat and simmer slowly for 1 hour 45 minutes until meat and cabbage are tender.
- 3 Whisk flour into 0.25 cup cold water to make a slurry. Stir into the soup to thicken.
- 4 Season with salt, pepper, and thyme. Simmer for 5 more minutes. Remove herbs and serve.
