Ingredients

  • 2 quarts water
  • 3 onions, chopped fine
  • 1 bouquet garni (soup herbs)
  • 2 slices salt pork, diced
  • 1.25 lbs soup meat with bone
  • 2.5 cups finely shredded cabbage
  • 2 tablespoons flour
  • 0.25 cup water
  • 1 tablespoon salt
  • 1 teaspoon pepper
  • 0.5 teaspoon thyme

Method

  1. 1 In a large saucepan, combine 2 quarts water, onions, soup herbs, salt pork, soup meat, and cabbage. Bring to a boil.
  2. 2 Reduce heat and simmer slowly for 1 hour 45 minutes until meat and cabbage are tender.
  3. 3 Whisk flour into 0.25 cup cold water to make a slurry. Stir into the soup to thicken.
  4. 4 Season with salt, pepper, and thyme. Simmer for 5 more minutes. Remove herbs and serve.
