Buttery Chestnut Purée
Ingredients
- chestnuts
- salt
- butter
- milk
Method
- 1 Make a small slit in each chestnut and boil until tender.
- 2 Transfer chestnuts to a pan with cold water and heat again.
- 3 Peel chestnuts one by one as you remove them from the water.
- 4 Rub the peeled chestnuts through a sieve, pounding to help.
- 5 Stir in salt, a good lump of butter, and a little milk.
