Buttery Chestnut Purée

Ingredients

  • chestnuts
  • salt
  • butter
  • milk

Method

  1. 1 Make a small slit in each chestnut and boil until tender.
  2. 2 Transfer chestnuts to a pan with cold water and heat again.
  3. 3 Peel chestnuts one by one as you remove them from the water.
  4. 4 Rub the peeled chestnuts through a sieve, pounding to help.
  5. 5 Stir in salt, a good lump of butter, and a little milk.
