Buttermilk Waffles With Egg Whites

Ingredients

  • 1 quart milk
  • ¼ pound butter
  • 1 tsp salt
  • 1 pint sifted flour
  • 4 eggs, separated
  • 2 tsp baking powder

Method

  1. 1 Warm the milk and melt the butter into it. Stir in the salt and let the mixture cool completely.
  2. 2 Whisk the sifted flour into the cooled milk mixture. Add the egg yolks and beat until smooth.
  3. 3 Beat the egg whites until stiff peaks form. Fold the whites gently into the batter.
  4. 4 Sprinkle the baking powder over the batter and stir gently to combine. Cook on a hot waffle iron until golden.
