Buttermilk Waffles With Browned Butter

Ingredients

  • 2 cups sifted flour
  • 2 cups milk
  • ½ cup softened butter
  • 3 egg yolks, well-beaten
  • 3 egg whites, stiffly beaten
  • 1 heaping teaspoon baking powder

Method

  1. 1 Make a smooth paste of the sifted flour and milk.
  2. 2 Add the softened butter, well-beaten egg yolks, and stiffly beaten egg whites.
  3. 3 Just before baking, stir in the heaping teaspoon of baking powder.
  4. 4 Beat the batter very hard for five minutes.
  5. 5 Bake in a very hot waffle iron until crisp.
