Buttermilk-Style Cornmeal Cakes With Eggs
Ingredients
- 1 cup yellow corn meal
- 3 cups milk
- 2 tablespoons melted butter
- 2 teaspoons sugar
- 1 teaspoon salt
- 1 teaspoon cream of tartar
- ½ teaspoon baking soda
- ½ cup white flour
- 2 eggs
Method
- 1 Pour boiling milk over corn meal in a mixing bowl and let cool.
- 2 Stir in melted butter, sugar, and salt.
- 3 Sift cream of tartar and baking soda with flour, then add to the batter.
- 4 Mix in two well-beaten eggs just before cooking.
