Buttermilk Strawberry Muffins
Ingredients
- 1 1/4 cups flour
- 1/4 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 3/4 cup buttermilk, low-fat
- 2 tablespoons margarine, melted
- 1 egg, slightly beaten
- 1/2 teaspoon vanilla extract
- 1 cup frozen strawberries, coarsely chopped
Method
- 1 Preheat oven to 400°F. Spray a 9-cup muffin tin with non-stick cooking spray.
- 2 In a large bowl, whisk together flour, sugar, baking powder, and baking soda until blended.
- 3 In a separate bowl, combine buttermilk, melted margarine, beaten egg, and vanilla extract.
- 4 Pour wet ingredients into dry ingredients. Stir gently just until moistened.
- 5 Fold in chopped strawberries. Do not over-mix.
- 6 Spoon batter evenly into muffin cups. Bake for 20-25 minutes until golden brown.
