Buttermilk Pancakes

Ingredients

  • 3 cups flour
  • 2 cups milk
  • 2 teaspoons baking powder
  • 1 tablespoon melted butter
  • 3 eggs
  • 1 teaspoon salt

Method

  1. 1 Sift the dry ingredients together.
  2. 2 Beat the egg yolks until light and creamy, then stir into the milk.
  3. 3 Mix the egg mixture with the flour, then add the melted butter and beat to a smooth batter.
  4. 4 Add more milk if the batter is too thick.
  5. 5 Fold in the egg whites beaten to stiff peaks.
  6. 6 Cook on a hot griddle as usual.
