Buttermilk Pancakes
Ingredients
- 3 cups flour
- 2 cups milk
- 2 teaspoons baking powder
- 1 tablespoon melted butter
- 3 eggs
- 1 teaspoon salt
Method
- 1 Sift the dry ingredients together.
- 2 Beat the egg yolks until light and creamy, then stir into the milk.
- 3 Mix the egg mixture with the flour, then add the melted butter and beat to a smooth batter.
- 4 Add more milk if the batter is too thick.
- 5 Fold in the egg whites beaten to stiff peaks.
- 6 Cook on a hot griddle as usual.
