Buttermilk Cornmeal Rice Muffins
Ingredients
- 2 cups buttermilk
- 1 cup white cornmeal
- 1 tsp baking soda
- 1 pinch salt
- 1 egg
- 1/2 cup cream
- 1/2 cup boiled rice
Method
- 1 Mash the boiled rice and mix in the salt, egg, and cream.
- 2 Mix the buttermilk with the baking soda.
- 3 Combine the buttermilk mixture and the cornmeal with the rice mixture.
- 4 Pour into buttered muffin pans and bake in a quick oven (425°F).
