Buttermilk Cornmeal Pancakes With Eggs

Ingredients

  • 2 cups corn meal
  • ½ cup flour
  • 1 tsp baking powder
  • 1 tsp soda
  • 2 eggs
  • 2 cups buttermilk
  • 2 tbsp butter
  • 1½ tsp salt

Method

  1. 1 Sift flour, corn meal, baking powder, soda, and salt together twice.
  2. 2 Beat eggs well, then add buttermilk and combine with the dry ingredients.
  3. 3 Beat the mixture until smooth, then stir in melted butter.
  4. 4 Pour batter onto a hot, greased griddle and cook until bubbles form.
  5. 5 Flip and cook until golden brown on the other side.
  6. 6 Serve immediately with brown sugar or syrup.
