Buttermilk Cornmeal Pancakes With Eggs
Ingredients
- 2 cups corn meal
- ½ cup flour
- 1 tsp baking powder
- 1 tsp soda
- 2 eggs
- 2 cups buttermilk
- 2 tbsp butter
- 1½ tsp salt
Method
- 1 Sift flour, corn meal, baking powder, soda, and salt together twice.
- 2 Beat eggs well, then add buttermilk and combine with the dry ingredients.
- 3 Beat the mixture until smooth, then stir in melted butter.
- 4 Pour batter onto a hot, greased griddle and cook until bubbles form.
- 5 Flip and cook until golden brown on the other side.
- 6 Serve immediately with brown sugar or syrup.
