Buttermilk Cornmeal Muffins
Ingredients
- 2 cups cornmeal
- 1 egg
- 2 tablespoons sugar
- 2 tablespoons fat
- 2 cups buttermilk
- 1 teaspoon salt
- 1 teaspoon baking soda
Method
- 1 Dissolve the baking soda in a small amount of cold water.
- 2 Mix all ingredients together, adding the soda mixture last.
- 3 Bake in a 425°F oven for 20 minutes.
