Buttermilk Corn Muffins
Ingredients
- 1 2/3 cups flour
- 1 cup cornmeal
- 2 tsp baking powder
- 2 tbsp butter
- 3 tbsp sugar
- 3 eggs, well-beaten
- 2 cups milk
Method
- 1 Sift together flour, cornmeal, and baking powder in a bowl.
- 2 Cream butter and sugar, then beat in eggs and milk.
- 3 Combine wet and dry mixtures and beat thoroughly.
- 4 Pour into well-buttered muffin tins and bake until golden.
