Buttermilk Bread Crumb Griddle Cakes
Ingredients
- 2 cups buttermilk or sour milk
- 1 cup water
- 2 cups bread crumbs
- 1 teaspoon baking soda
- 3 tablespoons water
- 2 tablespoons syrup
- 2 tablespoons shortening
- 1 teaspoon salt
- 1 ½ cups flour
- 2 teaspoons baking powder
Method
- 1 In a pitcher, combine buttermilk, 1 cup water, and bread crumbs. Let stand in a cool place overnight; do not refrigerate.
- 2 Dissolve baking soda in 3 tablespoons water. Add to the batter along with syrup, shortening, salt, flour, and baking powder.
- 3 Beat the mixture vigorously to combine thoroughly.
- 4 Pour batter onto a hot griddle and cook until bubbles form, then flip and cook until golden brown.
