Buttermilk Biscuit Muffins
Ingredients
- 4 cups flour
- 2.5 cups milk
- 3 eggs, separated
- 2 tablespoons butter, melted
- 1 teaspoon salt
- 1 tablespoon sugar
- 3 teaspoons baking powder
Method
- 1 Sift flour, salt, sugar, and baking powder together in a large bowl.
- 2 In a separate bowl, whisk milk, melted butter, and egg yolks until combined.
- 3 Pour wet ingredients into dry ingredients and stir gently until just combined.
- 4 Fold in well-beaten egg whites last.
- 5 Fill buttered muffin rings two-thirds full.
- 6 Bake in a 425°F oven for 20 minutes. Serve immediately.
