Buttered Sieved Tomato Onion Soup

Ingredients

  • 1 ¾ cup canned tomatoes
  • 6 oz fresh tomatoes
  • 1 small onion
  • 1 tsp cornstarch
  • 1 tsp water
  • 1 tbsp butter
  • Salt and pepper to taste

Method

  1. 1 Chop the onion finely. Combine tomatoes and onion in a saucepan with enough water to make 1/2 pint of liquid.
  2. 2 Simmer for 15 minutes until vegetables are tender.
  3. 3 Rub the mixture through a sieve back into the saucepan and bring to a boil.
  4. 4 Mix cornstarch with a spoonful of water to smooth it, then stir into the soup to thicken.
  5. 5 Stir in butter, season with salt and pepper, and serve with toast points.
