Buttered Sieved Tomato Onion Soup
Ingredients
- 1 ¾ cup canned tomatoes
- 6 oz fresh tomatoes
- 1 small onion
- 1 tsp cornstarch
- 1 tsp water
- 1 tbsp butter
- Salt and pepper to taste
Method
- 1 Chop the onion finely. Combine tomatoes and onion in a saucepan with enough water to make 1/2 pint of liquid.
- 2 Simmer for 15 minutes until vegetables are tender.
- 3 Rub the mixture through a sieve back into the saucepan and bring to a boil.
- 4 Mix cornstarch with a spoonful of water to smooth it, then stir into the soup to thicken.
- 5 Stir in butter, season with salt and pepper, and serve with toast points.
