Buttered Potato Celery Soup With Parsley
Ingredients
- 1/2 lb potatoes
- 1 pint water
- 1 small onion
- 1 stalk celery
- 1 tbsp butter
- 1 tsp chopped parsley
- Salt and pepper to taste
Method
- 1 Peel, wash, and dice the potatoes, onion, and celery into small pieces.
- 2 Place the vegetables in a pot with the water and cook until very tender.
- 3 Rub the cooked mixture through a sieve to create a smooth base.
- 4 Stir in the butter and season with salt and pepper, then boil briefly.
- 5 Mix in the chopped parsley and serve immediately.
