  • 1 small onion
  • 1 stalk celery
  • 1 tbsp butter
  • 1 tsp chopped parsley
  • Salt and pepper to taste

  1. 1 Peel, wash, and dice the potatoes, onion, and celery into small pieces.
  2. 2 Place the vegetables in a pot with the water and cook until very tender.
  3. 3 Rub the cooked mixture through a sieve to create a smooth base.
  4. 4 Stir in the butter and season with salt and pepper, then boil briefly.
