Buttered Green Peas With Parsley
Ingredients
- Fresh green peas
- Pearl ash or ashes in a rag (optional, for color)
- Butter
- Salt
- Pepper
- Fresh parsley
Method
- 1 Bring a pot of water to a rolling boil.
- 2 Add the peas to the boiling water. Cook for about 30 minutes, or longer for later varieties, until tender.
- 3 If the peas are turning yellow, add a small amount of pearl ash or ashes tied in a rag to restore green color. Do not overuse.
- 4 Drain the peas thoroughly.
- 5 Season with butter, salt, and pepper. Garnish with a bunch of fresh parsley in the center.
