Buttered Green Peas With Parsley

Ingredients

  • Fresh green peas
  • Pearl ash or ashes in a rag (optional, for color)
  • Butter
  • Salt
  • Pepper
  • Fresh parsley

Method

  1. 1 Bring a pot of water to a rolling boil.
  2. 2 Add the peas to the boiling water. Cook for about 30 minutes, or longer for later varieties, until tender.
  3. 3 If the peas are turning yellow, add a small amount of pearl ash or ashes tied in a rag to restore green color. Do not overuse.
  4. 4 Drain the peas thoroughly.
  5. 5 Season with butter, salt, and pepper. Garnish with a bunch of fresh parsley in the center.
