Buttered Currant Griddle Cakes
Ingredients
- 1 lb flour
- 2 oz currants
- 1 1/2 cups milk
- 1 pinch baking powder
- Butter for serving
Method
- 1 Mix flour, currants, milk, and baking powder in a pan to form a firm, smooth, compact paste.
- 2 Divide the paste into eight equal parts. Roll each into a ball, then flatten into circles the size of a tea saucer using a rolling pin.
- 3 Bake on a griddle over a clear fire for 2-3 minutes until the underside is done. Turn and bake the other side.
- 4 Remove from heat and immediately spread a little butter on each pie-clat.
