Buttered Cornmeal Biscuits
Ingredients
- 1 ½ cups bread flour
- ¼ teaspoon baking soda
- ¾ cup corn meal
- 3 teaspoons baking powder
- 1 teaspoon salt
- 1 tablespoon sugar
- 2 tablespoons shortening
- 1 egg
- ½ cup sour milk
- Melted butter, for brushing
Method
- 1 Sift together bread flour, baking soda, corn meal, baking powder, salt, and sugar.
- 2 Cut in shortening using a case knife until the mixture resembles coarse crumbs.
- 3 Beat the egg, mix in sour milk, and combine with the dry ingredients to form a dough.
- 4 Roll the dough to ½ inch thickness, cut with an oval cutter, and place on a greased baking sheet.
- 5 Brush rolls with melted butter, double them over, and bake at 450°F for 12 minutes.
