Buttered Cornmeal Biscuits

  • 1 ½ cups bread flour
  • ¼ teaspoon baking soda
  • ¾ cup corn meal
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 2 tablespoons shortening
  • 1 egg
  • ½ cup sour milk
  • Melted butter, for brushing

Method

  1. 1 Sift together bread flour, baking soda, corn meal, baking powder, salt, and sugar.
  2. 2 Cut in shortening using a case knife until the mixture resembles coarse crumbs.
  3. 3 Beat the egg, mix in sour milk, and combine with the dry ingredients to form a dough.
  4. 4 Roll the dough to ½ inch thickness, cut with an oval cutter, and place on a greased baking sheet.
  5. 5 Brush rolls with melted butter, double them over, and bake at 450°F for 12 minutes.
