Buttered Chestnut Purée

Ingredients

  • large imported chestnuts
  • butter
  • pepper
  • salt

Method

  1. 1 Shell chestnuts and boil in water for a few minutes to loosen skins.
  2. 2 Rub off skins, then cover with fresh boiling water and boil until tender.
  3. 3 Press the cooked chestnuts through a sieve.
  4. 4 Season the purée with butter, pepper, and salt to taste.
