Buttered Chestnut Purée
Ingredients
- large imported chestnuts
- butter
- pepper
- salt
Method
- 1 Shell chestnuts and boil in water for a few minutes to loosen skins.
- 2 Rub off skins, then cover with fresh boiling water and boil until tender.
- 3 Press the cooked chestnuts through a sieve.
- 4 Season the purée with butter, pepper, and salt to taste.
