Buttered Chestnut And Apple Mash
Ingredients
- 1 lb chestnuts
- 2-3 sour apples, peeled and diced
- 1 tbsp butter
- Salt to taste
Method
- 1 Score the chestnuts, wash them, and boil in water for 5-6 minutes. Peel off the shells and inner skins.
- 2 Return peeled chestnuts to fresh boiling water and simmer gently for 20-30 minutes until tender.
- 3 While chestnuts cook, boil diced apples until soft and mashed into a sauce.
- 4 Mash the cooked chestnuts finely and mix them thoroughly with the warm applesauce.
- 5 Stir a knob of butter into the mixture, serve warm.
