Butter Shortbread Cookies

Ingredients

  • 2 lbs flour
  • 1 lb loaf sugar, beaten fine
  • 1.5 lbs sweet butter
  • 4 egg yolks
  • 4-5 tbsp sherry
  • 4 tbsp cream

Method

  1. 1 Dry and sift the flour. Beat the sugar until fine and sift it. Mix the flour and sugar thoroughly.
  2. 2 Cut the butter into small bits and work it into the flour and sugar mixture until combined.
  3. 3 Beat the egg yolks, sherry, and cream together. Add this liquid to the dry ingredients and mix into a paste.
  4. 4 Shape the dough into desired forms. Place on parchment paper or plates.
  5. 5 Bake in a moderate oven (350°F) for a short time, as they bake quickly. Watch carefully to prevent burning.
