Butter Shortbread Cookies
Ingredients
- 2 lbs flour
- 1 lb loaf sugar, beaten fine
- 1.5 lbs sweet butter
- 4 egg yolks
- 4-5 tbsp sherry
- 4 tbsp cream
Method
- 1 Dry and sift the flour. Beat the sugar until fine and sift it. Mix the flour and sugar thoroughly.
- 2 Cut the butter into small bits and work it into the flour and sugar mixture until combined.
- 3 Beat the egg yolks, sherry, and cream together. Add this liquid to the dry ingredients and mix into a paste.
- 4 Shape the dough into desired forms. Place on parchment paper or plates.
- 5 Bake in a moderate oven (350°F) for a short time, as they bake quickly. Watch carefully to prevent burning.
