Butter Sautéed Soft Shell Crabs

  • pepper
  • flour
  • butter
  • lemon juice

Method

  1. 1 Wash crabs carefully, lift the flap, and remove the sand-bag, gills, and intestine. Dry them well.
  2. 2 Dredge the crabs in salt, pepper, and flour.
  3. 3 Sauté the crabs in a generous amount of butter in a frying-pan on both sides until done.
  4. 4 Place crabs on a hot dish. Add lemon juice to the butter in the pan, strain, and pour over the crabs.
  5. 5 Sprinkle with finely chopped parsley before serving.
