Butter Sautéed Soft Shell Crabs
Ingredients
- soft-shell crabs
- salt
- pepper
- flour
- butter
- lemon juice
- parsley
Method
- 1 Wash crabs carefully, lift the flap, and remove the sand-bag, gills, and intestine. Dry them well.
- 2 Dredge the crabs in salt, pepper, and flour.
- 3 Sauté the crabs in a generous amount of butter in a frying-pan on both sides until done.
- 4 Place crabs on a hot dish. Add lemon juice to the butter in the pan, strain, and pour over the crabs.
- 5 Sprinkle with finely chopped parsley before serving.
