Butter Rubbed Bread Rolls
Ingredients
- 1 loaf-sized portion raised bread dough
- 1 tbsp butter (optional, if dough has no shortening)
- Additional flour, as needed
- Butter, for rubbing crusts
- Milk or egg wash (optional, for color)
- Sugar dissolved in milk (optional, for glaze)
Method
- 1 If your dough lacks shortening, knead in 1 tbsp butter. Add flour to make the dough stiffer than standard bread dough.
- 2 Knead the dough for 10 minutes to create a finer grain. Divide into pieces half the size of an egg.
- 3 Roll pieces into balls. Place on a pan far apart for crusty rolls, or close together for soft rolls. Let rise until more than double in size.
- 4 Brush with milk or egg if you desire a deep color. Bake in a quick oven (425°F) for 20-30 minutes.
- 5 Remove from oven and immediately rub crusts with butter. Wrap in a cloth until serving to keep crusts tender.
