Butter Poached Onions With Cream Sauce

Ingredients

  • 2 lbs medium onions
  • Broth, enough to cover onions
  • 1 tbsp butter
  • 1 tbsp flour
  • 1 cup broth
  • Salt and pepper to taste

Method

  1. 1 Soak onions in cold water for 30 minutes. Peel and place in a saucepan, covering with broth.
  2. 2 Simmer on low heat for 1 to 2 hours until soft and cooked through. Drain well.
  3. 3 In a separate pan, melt butter and whisk in flour. Add 1 cup broth, salt, and pepper.
  4. 4 Bring sauce to a boil, stirring constantly. Pour hot sauce over drained onions and serve immediately.
