Butter Poached Onions With Cream Sauce
Ingredients
- 2 lbs medium onions
- Broth, enough to cover onions
- 1 tbsp butter
- 1 tbsp flour
- 1 cup broth
- Salt and pepper to taste
Method
- 1 Soak onions in cold water for 30 minutes. Peel and place in a saucepan, covering with broth.
- 2 Simmer on low heat for 1 to 2 hours until soft and cooked through. Drain well.
- 3 In a separate pan, melt butter and whisk in flour. Add 1 cup broth, salt, and pepper.
- 4 Bring sauce to a boil, stirring constantly. Pour hot sauce over drained onions and serve immediately.
