Butter Poached Lobster With Anchovy Gravy

Ingredients

  • 1 boiled lobster, meat removed from shell
  • Lobster shells and body remains (excluding large claws)
  • Water (small amount)
  • Cayenne pepper
  • Salt
  • Black pepper
  • 2 tsp anchovy pickle
  • Rich melted butter

Method

  1. 1 Remove lobster meat whole. Place shells, body remains, and claws (except large ones) in a pot with a small amount of water, cayenne, salt, and black pepper.
  2. 2 Stew the shells until the liquid has a strong lobster flavor. Add 2 tsp anchovy pickle.
  3. 3 Strain the liquid through a sieve. Return the strained lobster gravy to the pot.
  4. 4 Add the lobster meat and rich melted butter to the gravy. Heat through and serve.
