Butter Poached Lobster With Anchovy Gravy
Ingredients
- 1 boiled lobster, meat removed from shell
- Lobster shells and body remains (excluding large claws)
- Water (small amount)
- Cayenne pepper
- Salt
- Black pepper
- 2 tsp anchovy pickle
- Rich melted butter
Method
- 1 Remove lobster meat whole. Place shells, body remains, and claws (except large ones) in a pot with a small amount of water, cayenne, salt, and black pepper.
- 2 Stew the shells until the liquid has a strong lobster flavor. Add 2 tsp anchovy pickle.
- 3 Strain the liquid through a sieve. Return the strained lobster gravy to the pot.
- 4 Add the lobster meat and rich melted butter to the gravy. Heat through and serve.
