Butter Poached Haricot Beans

Ingredients

  • 1 pint soaked haricot beans
  • 1 pint water
  • 1 teaspoon salt
  • 1 ounce butter
  • Optional: chopped parsley, grated nutmeg, or lemon juice

Method

  1. 1 Boil the beans in water for 30 minutes.
  2. 2 Add salt and boil gently for another 30-45 minutes.
  3. 3 Strain the beans and let them dry in a colander.
  4. 4 Melt butter in a stewpan and gently toss the beans to coat without breaking them.
  5. 5 Serve plain or with optional parsley, nutmeg, or lemon juice.
