Butter Poached Haricot Beans
Ingredients
- 1 pint soaked haricot beans
- 1 pint water
- 1 teaspoon salt
- 1 ounce butter
- Optional: chopped parsley, grated nutmeg, or lemon juice
Method
- 1 Boil the beans in water for 30 minutes.
- 2 Add salt and boil gently for another 30-45 minutes.
- 3 Strain the beans and let them dry in a colander.
- 4 Melt butter in a stewpan and gently toss the beans to coat without breaking them.
- 5 Serve plain or with optional parsley, nutmeg, or lemon juice.
