Butter Pan-Fried Lyonnaise Potatoes
Ingredients
- 1 ½ tbsp butter
- 1 scant tbsp chopped onion
- 2 cups cold boiled potatoes, diced
- Salt and pepper to taste
- 1 tbsp chopped parsley
Method
- 1 Melt butter in a frying pan over medium heat.
- 2 Add chopped onion and cook until slightly colored.
- 3 Add diced cold boiled potatoes and stir until potatoes absorb butter and brown slightly.
- 4 Season with salt and pepper, sprinkle with parsley, mix well, and serve hot.
