Butter Pan-Fried Lyonnaise Potatoes

Ingredients

  • 1 ½ tbsp butter
  • 1 scant tbsp chopped onion
  • 2 cups cold boiled potatoes, diced
  • Salt and pepper to taste
  • 1 tbsp chopped parsley

Method

  1. 1 Melt butter in a frying pan over medium heat.
  2. 2 Add chopped onion and cook until slightly colored.
  3. 3 Add diced cold boiled potatoes and stir until potatoes absorb butter and brown slightly.
  4. 4 Season with salt and pepper, sprinkle with parsley, mix well, and serve hot.
