  • 3 eggs
  • salt and pepper to taste
  • 2½ tablespoons butter

Method

  1. 1 Drain the oysters.
  2. 2 Melt butter in a pan and cook the oysters until they curl.
  3. 3 Beat the eggs lightly and pour them over the oysters.
  4. 4 Season with salt and pepper, then shake the pan until the omelet is done.
  5. 5 Serve immediately.
