Butter Glazed Mint Peas

Ingredients

  • green peas
  • boiling water
  • sugar
  • mint sprigs
  • butter
  • castor sugar
  • pepper
  • salt

Method

  1. 1 Place peas in plenty of boiling water with a little sugar and a sprig or two of mint.
  2. 2 Boil gently with the lid off for 20 minutes or more, depending on the size and age of the peas.
  3. 3 Drain the peas in a colander.
  4. 4 Return peas to a saucepan with butter, a teaspoonful of castor sugar, pepper, and salt. Shake over heat for 1-2 minutes.
