Butter Glazed Mint Peas
Ingredients
- green peas
- boiling water
- sugar
- mint sprigs
- butter
- castor sugar
- pepper
- salt
Method
- 1 Place peas in plenty of boiling water with a little sugar and a sprig or two of mint.
- 2 Boil gently with the lid off for 20 minutes or more, depending on the size and age of the peas.
- 3 Drain the peas in a colander.
- 4 Return peas to a saucepan with butter, a teaspoonful of castor sugar, pepper, and salt. Shake over heat for 1-2 minutes.
