Butter Fried Eggplant Slices
Ingredients
- 1 eggplant, sliced ½ inch thick
- salt
- cold water
- pepper
- flour
- butter
Method
- 1 Slice the eggplant ½ inch thick. Sprinkle with salt and let stand for a few minutes to draw out bitterness.
- 2 Rinse the slices in cold water and wipe them completely dry with a towel.
- 3 Season the eggplant slices with salt and pepper, then dredge them lightly in flour.
- 4 Fry the slices in butter until golden brown on both sides. Serve immediately.
