  • 1 eggplant, sliced ½ inch thick
  • salt
  • cold water
  • pepper
  • flour
  • butter

Method

  1. 1 Slice the eggplant ½ inch thick. Sprinkle with salt and let stand for a few minutes to draw out bitterness.
  2. 2 Rinse the slices in cold water and wipe them completely dry with a towel.
  3. 3 Season the eggplant slices with salt and pepper, then dredge them lightly in flour.
  4. 4 Fry the slices in butter until golden brown on both sides. Serve immediately.
