Butter Fried Crêpes

Ingredients

  • 3 large eggs
  • 4.5 oz all-purpose flour
  • Milk, as needed
  • Butter, for frying
  • Loaf sugar, grated (optional)

Method

  1. 1 Beat 3 eggs with 4.5 oz flour and a little milk until smooth.
  2. 2 Gradually add milk to create a batter as thick as good cream.
  3. 3 Heat a frying pan and melt a walnut-sized pat of butter in it.
  4. 4 Pour in batter to cover the bottom, cooking to the thickness of half a crown.
  5. 5 Serve plain or sprinkle with grated sugar.
