  • 3 egg yolks
  • 1 tbsp oil
  • 1 tbsp brandy
  • salt
  • flour or grated bread
  • large cold potatoes, sliced
  • butter for frying

Method

  1. 1 Whisk egg yolks, salt, oil, and brandy. Add flour or grated bread until the batter thickens.
  2. 2 Heat butter in a pan over medium heat.
  3. 3 Dip potato slices into the batter, allowing excess to drip off.
  4. 4 Fry the battered slices in the butter until golden brown on both sides.
